Curry

Ingredients
- 1 lb chicken or pork, cut into cubes
- 1 TBL soy sauce
- 1TBL flour
- 2 TBL oil
- 2 TBL green curry paste (I use Mae Ploy)
- 2 green onions or ½ white onion
- 3 cloves garlic
- 1 tsp ginger (fresh or ground)
- 1 can coconut milk
- 1 TBL fish sauce
- 1TBL soy sauce
- 2 TBL sugar
Steps
- Toss meat in 1 TBL soy sauce, then toss in flour.
- Heat oil in skillet over medium-high heat. Cook meat until browned (about 5 minutes) remove meat.
- Reduce heat to medium & stir in curry paste. Cook 1 minute until fragrant. Add onion, garlic, and ginger. Cook 2 minutes
- Return meat to skillet, stirring to coat.
- Stir coconut milk, fish sauce, 1 TBL soy sauce, and sugar in.
- Allow to simmer over medium for 20 min until chicken is tender.
Serve over rice or noodles
